The Canarian wrinkly potatoes is the most typical and traditional in the Canarian Islands. They have this name because it is the way they cook them, boiling the potatoes without peeling them with a lot of salt, so when they are cooked they have a salty crust in the skin. They are served with meat or simply as a tapa with the mojo verde or mojo picón sauce.
