The Ropa Vieja is the most famous stew in the Canarian Islands and it has this name from his origin. In the past it was made out of the leftover food and then the stew was made. Stew in Spanish can be “Potaje”. Nowadays, they make it with shredded meat, chickpeas and wrinkly potatoes. It is definetely a must-try dish.
