The guineos, or bananas, is a fruit that is overly used in the Dominican gastronomy. There are many ways to prepare the guineos: stewed, confited, mashed, in a juice…it can be used as the main dish or as the side dish. Among all these versions, one of the common ways to eat it is boiled and mashed. The most known dishes are the Mangú, which is a green banana mash, or the Mofongo, the same mash with pork rind.
