Bitterballen are small fried balls battered in crispy bread and filled with stewed meat, butter, herbs and spices, much like croquettes. In the Netherlands, they are served with mustard as an appetizer in most bars and cafes and accompanied by liquors, that's why they are named: bitter, although this liquor is usually replaced by beer.
