Baked caramel pork belly is a very integrated dish in the cuisine of Houston. The dish is simple and really greasy: they cover the pieces of meat –or bacon- with maple syrup or with the Jeff’s Rub sauce, a barbeque sauce brew that has a sweet and spicy flavor at the same time. Then they pour brown sugar on top and the meat is marinated until finished.
