The Creole cuisine is rooted in the culinary traditions in the south of Texas. A dish that is easily found –and typical from Louisiana- is the Jambalaya. This provencal dish has Creole origins, and the main ingredients are: stir-fried vegetables, meat –smoked Andouille sausage, chicken or pork-, fish and shellfish –crab or shrimps-, rice, celery, and spices.
