The falafel is the near East version of the croquette. The main ingredients are the chickpeas; these are mashed to make a uniform dough, then it is common to add salt, pepper and some spices, usually cumin. Once these dough balls are made, they are fried in oil. Usually served as an appetizer, it is served with a yogurt sauce or tahini. Occassionaly, it is also served with warm pita bread or something similar, and it’s no surprise… The result is healthy and tasty!
