Adobo is part of the popular and traditional cuisine of the Philippines and appears in virtually all restaurant menus. It is a dish of meat, vegetables or seafood, all marinated in vinegar and simmered with soy sauce and garlic. Sometimes, as a final step, it's fried to give it a crunchy texture.
