Pork is a very common animal in the kitchen of the Philippines. They have the art of its cooking. The Lechon kawali is a juicy dish, with the outside portion being crispy pork while the inside is very tender. One of the secrets is that they left the pork belly to dry for one day in the fridge and then they boil it to get a very tasty result.
