Herring under a fur coat is a very common dish in Russian cuisine and the recipe is quite similar to the Olivier salad, also known as Russian salad. The basic ingredients are the same: potatoes and carrots. But this recipe also has eggs, beets, onions and of course, herring. It is called herring under a fur coat because it is often presented in a way that resembles the herring covered by a blanket of different layers of vegetables.
