Europe - Spain - Alicante
The crusted rice is a typical Alicante dish cooked in a clay pot or a paella. Rice is the basic ingredient and is usually accompanied with whitey botifarrón, -inlay of pork- white or red sausage and sometimes supplemented with saffron, garlic or tomato. Once the dish is semi- cooked, an egg is beaten with it and with a little nutmeg, is placed in the oven until it crusts.
