The chifrijo is one of the most recent dishes in the Costa Rican cuisine, but that’s not a reason for it to not be tasty. There are two main ingredients, pork rind – melted pork fat- with beans and decorated with tomatoes, onion, coriander, a little bit of pepper, garlic, avocado, sweet chili, a few drops of lemon and toasted tortillas. The recipe was born in the 90s, at the bars of the capital, in San José, and it’s a dish that appears in many canteens, bars and restaurants of the country.
