Oven cooked eggplant and Carbassonada, oven cooked zuchini, are a common dish in Minorca homes. Eggplants are cut in thin slices and baked covered in bread crumbs, chopped garlic and parsley. Sometimes they also have chopped onion. It's easy to cook and delicious.
